- Prepare 1 Cup Tamarind Extract
- Take 3 tbsp Jaggery (Gur)
- Make ready 1 tsp Chaat Masala
- Take 1 tsp Cumin Powder
- Get 1/4 tsp Pepper Powder
- Take 1/4 tsp Kashmiri Lal Mirch Powder
- Prepare Pinch Asafoetida
- Prepare 3/4 tsp Black Salt
- Get 3 Cups Cold Water
- Get For Safed Vatana Stuffing Ingredients:
- Make ready 1 Cup Washed White Vatana
- Take 2 Potatoes Boiled and Peeled
- Prepare 1 tsp Chaat Masala
- Make ready Half tsp Turmeric powder
- Take Pinch Asafoetida
- Make ready 1 tsp Cumin Powder
- Take 2-3 Garlic cloves
- Take as per taste Salt
- Prepare as required Oil For tadka
- Take 1 tsp Cumin seeds
- Make ready 2-3 Green chillies
- Make ready For Serving:
- Get 2-3 tbsp Khari Boondi
- Get For Stuffing:
- Make ready 1 Chopped Onion
Instructions to make Gol Gappey:
- For puri :In a large bowl take 1 cup rava and 2 tbsp Maida.
- Add 3 tbsp oil. Crumble and mix well to make rava moist.
- Now add a bit by bit hot water and start kneading. Keep sprinkling water in between and keep Kneading. Knead till dough is formed.
- Cover the dough with a moist cloth and rest for 20 mins. After 20-30 mins knead again.
- Now pinch a small ball size Portion from the dough. Roll with the help of a roll pin and flatten into a small thin circular Puri.
- Deep Fry puris in small batches. Flip and fry from both sides. Use medium flame and let puris puff up. Take out crispy puris on kitchen towel. Keep aside to use later. Puris are ready.
- For Teekha Pani Recipe: In a grinder add pudina leaves, coriander leaves, green chillies, ginger, roughly sliced raw mango, tamarind pulp,Pani Puri Masala, Asafoetida, Black Salt and a bit of water.
- Now grind to make a smooth Puree. Transfer the puree through a strainer. Add cold water in grinder and grid again. Sieve through a strainer and add more cold water. Adjust Salt and Khatta pani consistency. Teekha Pani is ready.
- For Meetha Pani Recipe:In a bowl take tamarind extract and jaggery. Now add chaat masala, Cumin Powder, pepper powder, Kashmiri Lal Mirch Powder, Black Salt, Asafoetida and cold water. Mix well Meetha Pani is ready.
- For Safed Vatana Recipe: In a pressure cooker add White Vatana, cubed potatoes, turmeric powder, Black Salt, Asafoetida,cumin powder and chaat masala, take 4-5 whistles.
- For tadka heat oil add cumin seeds, crushed garlic cloves and chopped green chillies. Pour this tadka over Safed Vatana Stuffing. Mix well. Stuffing ready.
- Pani Puri - Prick a Puri make a large hole. Add Safed Vatana Stuffing, chopped onions, Meetha Pani and dip it in Teekha Pani (with khari Boondi).
