  1. Prep Topping Ingredients: finely blend the bread slices using a food processor. Mix thoroughly with paprika, lemon zest and cheese. Season and set aside
  2. Finely chop bacon and red onion and fry till bacon is crispy and onion is caramelised
  3. Cook macaroni in a boiling water for 6-7 mins. Add the mixed herbs. Season(or till desired texture is attained)
  4. Melt the butter in a medium heat and slowly add flour whilst stirring. Then add double cream and whisk for 2-3mins away from heat. Bring back to heat and slowly add milk whilst stirring. Add cheese when the mixture turns to white colour(stir continuously). Add lemon juice when thick paste is formed(add more milk if less thickness is desired). Season.
  5. Pour in the sauce into drained cooked pasta and mix thoroughly. Preheat oven @200’C. Transfer the mixture into a ceramic baking dish. Top with breadcrumbs topping mixture. And cook in the oven for 10-15mins. Till golden brown. Top with bacon and onion mix and return back to the oven for 2 mins approx.
  6. For the Side: shallow fry sugarsnaps and chill. Add light soy sauce and season.
