- Add the peas and mushrooms and remaining curry powder. Leave for 10-15 minutes until the peas have cooked and potatoes are soft.
- Serve over rice.
Drain and add the chickpeas, then the spinach. Cook, stirring, until the spinach wilts. Transfer to a serving bowl and serve with a dollop of yoghurt and a squeeze of lime juice. Add tomatoes, potato and stock or water. Garnish with coriander and green chilli (if using) and serve with a small dish of raita and chapatis.
