  2. Leave cauliflower in steamer basket and carefully remove basket from pot. Set aside. Pour water out of pot. Return pot to stove. Reduce heat to medium low.
  3. Add bechamel sauce to pot. Cook over medium low heat until just heated through, stirring frequently. Add cauliflower to warmed sauce. Gently stir to coat.
  4. Serve as-is or garnish with parmesan and/or chopped fresh parsley.

I have been using this sauce instead of Béchamel for years, well, ever since having kids and wanting to hide veggies everywhere. Cover the cauliflower with the remaining bechamel. Make the topping by combining the melted butter with the breadcrumbs and cheeses. At this point, the gratin can be covered and refrigerated for later baking. Allow a little additional baking time if placing in the oven directly from the fridge.
