The ingredients needed to make Chicken Parmesan:
  1. Get Chicken Base
  2. Make ready 4 Chicken Fillets
  3. Prepare 100 grams Breadcrumbs
  4. Take 1 Egg
  5. Make ready Bechamel Sauce
  6. Prepare 425 ml Milk
  7. Make ready 1 Bay Leaf
  8. Prepare 1 pinch Black Pepper
  9. Prepare 1 pinch Salt
  10. Take 20 grams Flour
  11. Prepare 40 grams Plain Flour
  12. Make ready 1 stick Carrot (peeled and cut into sticks)
  13. Make ready 1 1/2 small onion (skinned and cut into half)
  14. Make ready Topping
  15. Get 250 grams Cheddar Cheese
Instructions to make Chicken Parmesan:
  1. Preheat Oven to 200°F
  2. Crack egg into large enough dish to lay a Chicken Fillet flat, and beat Egg.
  3. Flatten Chicken with Hammer
  4. Dip Chicken Fillets into Egg and Coat
  5. Coat Chicken Fillets in Breadcrumbs
  6. Deep Fry Breaded Fillets until just cooked and Golden Brown. Around 10 to 15 minutes. After cooking, place on Kitchen towel to absorb excess oil.
  7. Meanwhile, heat Milk up in a small heavy bottomed pan. Careful not burn bottom of pan.
  8. Add Bay Leaf, onion, and Carrot to Milk, and gently warm for around 10 minutes. Essentially you are flavorings the milk.
  9. Once Milk has been flavoured, strain and discard of onion, bay leaf and Carrot.
  10. Next, heat Butter in large pan and turn heat down once melted, to a simmering heat.
  11. Add flour to butter and stir. the mix will become very thick and look like a Sandy texture. This is a roux.
  12. Add a little bit of Milk at a time, about 50ml. Stir until the milk has been absorbed
  13. Once all Milk has been absorbed. You should now have your Bechamel Sauce.
  14. Spread Breaded Chicken Fillets with Bechamel Sauce and place into the oven (15mins). The sauce will become less thick once heated up in oven.
  15. Now that your Breaded Chicken Fillets have been cooked through and Bechamel sauce is starting to cook and bubble, Add your Cheddar Cheese and Grill until cheese has melted.
  16. Serve immediately with Homemade Chips and Salad. Garlic Mayonnaise makes a great Condiment
