Instructions to make Auntie's Delicious Chicken and Mushroom Pilaf (with a kick!):
- Here are the main ingredients.
- Chop the garlic, onions, chilli and red pepper (finely and coarsely for some varied texture).
- In a pot (or in our case, the Tefal 10-in-1 multicooker), add a generous glug of olive oil and slowly sweat the onions, garlic, chilli and pepper. Add the mushrooms and fry with smoked paprika.
- Add the peas and wine (stir until you have cooked off the wine).
- Add the chicken and stock to the pot and stir thoroughly.
- Cover the pot and place into a pre-heated oven at 180° C for 30-40 minutes. You may wish to turn the oven down to 160° C after 25 minutes. In our case, the multicooker has a rice function which cooks everything in approximately 30 minutes. Voilà!
Browning the meat in the pan first adds all that roasted chicken flavor to the pilaf. The Brussels sprouts and chicken thighs slowly braise as the rice cooks–a protein, vegetable side, and starch all in one pan. Sweet golden raisins and cider vinegar balance out the other hearty, earthy flavors in the dish. See great recipes for Lazy Pizza Sauce with a Kick, Pineapple Beer with a kick too!
