Ofe Nsala (Nsala Soup) is a delicious soup, popular in the eastern part of Nigeria. If you want to add beef, chicken or stock fish or dried fish to your Nsala soup; season and cook the meat or dried fish , with onions, seasoning cube. Ofe Nsala is known as white soup because Palm oil is not used for the preparation, unlike other traditional soups. The proper thickener used for Ofe Nsala is Although Catfish and other types of fishes are traditionally used for Ofe Nsala, I find it tastier with hard/ old Chicken, Goat meat and even.
Instructions to make Nsala soup with chicken & cat fish:
- Season your fish and chicken with salt and Maggi, add little water and cook for about 10mins. Remove the fish and continue cooking
- Peel your yam, cut into pieces, wash and set on fire with water. Cook for about 10 to 15mins. Pound to a smooth paste. Now blend your crayfish and pepper and pour into the meat on fire. Add your spices and then cut your pounded yam into lumps and add into the soup. Cover and leave to dissolve.
- Now return your fish into the pot, stir together and leave to simmer for another 10mins. Add your sliced utazi leaf and a little salt if need be. Stir together and your soup is ready.
- Enjoy with pounded yam or akpu or any swallow of your choice. For me, it's going down with starch as tradition demands 🤣🤣🤣🤣
