I roasted the peppers first, and then removed the skin. I also added some seasoning salt and because I live with a vegetarian I used a vegetarian "chicken stock". I made it once with a vegetable vegetarian stock but found that the flavor wasn't as rich. And the rice in this soup gives it such a great texture and adds some body to it to keep it filling.

Steps to make Pepper soup:
  1. Firstly wash catfish with salt and hot water to get rid of the mucus like substance
  2. Grate chilly, scotch bonnet, ginger, garlic
  3. Fry palm oil with onion add the grated ingredient and fry to form sauce
  4. Arrange fish in pot
  5. Add sauce
  6. Add onion
  7. Add curry and thyme
  8. Add seasoning cube and salt
  9. Add little water and mix together, close and place on heat and allow to cook for 10-12min
  10. Serve hot with rice, tuwo and anything of your choice I serve mine with pounded yam…
