Daelmans Stroopwafels with Caramel are soft, toasted waffles filled with caramel, cinnamon and real Bourbon vanilla. These wafer cookies are sized to fit on top of a hot cup of coffee or tea in order to warm them up. This is a Dutch favorite, though I've seen them recently at Starbucks (horribly overpriced, of course). If you don't have a pizzelle iron, don't despair.

Steps to make Stroopwafel:
  1. Dissolve the yeast in the lukewarm milk in a bowl. Add sugar, butter and beaten egg.
  2. Mix and then stir in the flour and salt. Gently knead to form a smooth dough.
  3. Cover the dough with plastic wrap and allow to rise for 1 hour.
  4. To make the filling, warm up the corn syrup and stir in the brown sugar, butter, and cinnamon. leave at room temperature to cool down.
  5. To cook waffle, form dough into golf-sized balls. Cover with moist towel and let them rise for 15 minute.
  6. Grease and heat a waffle iron, place the dough at the center of iron and bake until golden brown.
  7. Working quickly, cut the waffles in half (horizontally), smear with the syrup filling and sandwich the two halves together, pressing lightly. Use cookie cutter to make consistency shape of cookie.

There's a super-easy shortcut: just buy waffle cookies at your supermarket (and Trader Joe's has some really fantastic cookies for sure). That's what I ended up doing, so don't think I am a whiz at pizzelle making! A baker from Gouda baked a waffle of old crumbs and spices and filled this waffle with syrup. In fact the Stroopwafel was a rest product. And therefor a popular pastry among the poor.
