I highly recommend adding orange zest as it adds so much flavor and it looks pretty too! Flour - Use unbleached all-purpose, light spelt flour or whole wheat pastry flour for best results.   1. Preheat oven to 350 F. Line a 1/2 cup muffin tin with paper muffin cups
  2. In med bowl whisk first 4 ingredients. In a larger bowl mix together everything else except cherries and zest. Combine wet and dry ingredients, then add zest and cherries and mix in.
  3. Divide batter evenly between 1/2 cups. Bake 20 mins or until golden brown.
