Aloo gobi curry is one of the most popular of current trending meals on earth. It’s simple, it’s fast, it tastes delicious. It is enjoyed by millions every day. They are fine and they look wonderful. Aloo gobi curry is something that I’ve loved my entire life.

The ingredients needed to make Aloo gobi curry:
- Prepare 1 whole gobi
- Prepare 3 potatoes
- Take 1 onion
- Make ready 2 tomatoes
- Get 2 tsp chilli powder
- Take 1 tsp garam masala
- Prepare 0.25 cup yogurt
- Prepare 1 tsp kasuri methi
- Get 2 tbsp coriander leaves
- Prepare 3 tsp roasted gram
- Get 10 cashews
- Prepare 0.5 tsp turmeric
- Take 1 bay leaf
- Take 1 stick cinnamon
- Prepare 5-6 cardamom seeds
- Take 1 tsp jaggery/sugar
- Take 1 tsp ginger garlic paste
- Prepare 5 ginger pieces small
- Get Jeera/ cumin seeds
- Make ready 1 tsp coriander powder
We often served it with wheat flat bread (roti), naan bread, or paratha (like I served it today). Wash the potatoes under cold water. Place in a large bowl, cover with cold water and set aside. Heat the oil in a medium-large lidded saucepan.
Steps to make Aloo gobi curry:
- In a pan take 2 tsp oil. Add onion, ginger garlic paste and ginger. sauté for awhile until onions turn golden brown. Now add cashews and tomatoes and sauté for 5 minutes.
- Cool it and blend the ingredients in mixer with roasted gram and 3 tbsp raw rice seeds. (This is to give thickness)
- Now in a pan take oil and sauté with jeera, bay leaf and cinnamon stick.
- Further add chilli powder, turmeric and garam masala and sauté in low flame for around a minute. This is to give a bright colour to the gravy. Now mix the onion and tomato paste and sauté for 5 minutes
- Also add coriander powder, salt and sugar.
- Further add potatoes and a cup of water and boil it for 10 minutes
- Now add gobi to the same mixture and boil it for another 15 minutes until gobi is cooked well. Add Yogurt. Add water if required.
- Now add crushed kasuri methi and coriander leaves and serve it hot with roti.
Fry the onion, cumin seeds, star anise and salt. Heat oil in a wok or a large heavy-based frying pan (with a lid) over medium heat. This Aloo Gobi is packed with flavors, super comforting, vegan and simply the best aloo gobi you will ever have! Aloo gobi (potatoes & cauliflower) is a popular Indian dish in which potatoes and cauliflower are cooked with onions, tomatoes and spices. A couple of suggestions - cut the potatoes smaller than the cauliflower as they take longer to cook.
