Instructions to make Shukhadi /gor papdi /gud papdi:
- Start to make shukhadi with roasting the wheat flour first.for that heat the ghee in the pan in low flame after that adding wheat flour to in.Roast the flour until golden brown in colour.It will take 3-4min.keep the flame low to medium.
- When you see flour turn into golden brown,flour fragrant is coming and the ghee is separating from the flour turn of the flam.
- Keep stirring the flour for couple of minutes because the pan heats up from the base.If you not stirring the flour will be burn at the bottom.let lightly cool down the flour.
- Now after 2-3 minuets we will add 1/4tsp cardamom powder,pinch of nutmeg powder and grated jaggery in to very hot flour.mix them well until jaggery properly mix in to the flour.
- Now our shukhadi is ready to set. Lets garish the small plate with ghee or brushing the plate with ghee and shifting our flour mixture in to the plate. Now spread it properly in to the plate and leave it for cool down.
- After 8-10 minutes lets divide our shukhadi into equals square or diamond shape with the help of the knife. And garnish with some poppy seeds…now it’s ready to serve.
Gujarati gol papdi is one of the quickest sweet to prepare and also this wheat flour based sweet is easier to prepare than any of the other traditional Gujarati sweets. The texture of golpapdi is not like kaju. Start with roasting wheat flour for making the papdi. In my Gujarati thali post, u would have seen this sweet recipe showcased in the middle of the plate.
