Instructions to make Saoji Mutton Recipe:
  1. Heat one tablespoon oil in a frying pan and add chopped onion and coconut and sauté till golden brown, cool and grind to a fine paste with little water.
  2. In the same pan sauté black cardamom, caraway seeds, coriander seeds, black peppercorns, green cardamom, cinnamon,bay leaf,dry chilli, stone flower and poppyseeds jowar attat till golden brown. Cool and grind to a paste with little water.
  3. Heat 4 tbsp oil a pressure cooker pan and add mutton pieces and sauté for a min on a high flame till lightly brown. Now remove the mutton pieces and keep aside.
  4. In the same pan add one finely chopped onion and sauté along with onion coconut paste and ginger garlic paste and mix.
  5. Now add ground masala paste and mix well and cook for a min. Now goes turmeric powder and red chilli powder sauté till oil starts separating.
  6. Once the masala cooks properly add roasted mutton and mix well. Cook the mutton coated masala for 5 to 6 mins on medium flame.
  7. Add salt and 3 cups of water. Bring to boil cover the cooker with the lid and cook under pressure till 3 to 4 whistles on a medium flame.
  8. Let the pressure reduce completely
  9. Garnish with chopped coriander leaves. Saoji mutton is ready. Serve hot with chapaati, paratha,roti or rice.

Serve it along with Steamed Rice, Jeera Rice and Lachha Paratha. Mutton gravy recipe can be made in various ways but here I have not used onions and tomatoes.
