This Kuska Recipe is a kind of Biryani, specially made with Jeeraga Samba Rice, without the addition of vegetables and Dum cooked without any layering. It is very famous in Tamilnadu, especially in Muslim homes and the word 'Kuska. A perfect hotel style Kuska Rice recipe! Never soggy, light and fluffy and deliciously flavorful, plus it's super easy to make.

Steps to make Ghee rice/ kuska rice/kuska biriyani:
  1. Wash rice with water 2 times and exceeding the water..keep aside atleast for 30 mins.
  2. Take a kadai or utensil for making rice which is good for dum. For cooking with dum technique we need a utensil which bottom is not thin, so sim/ slow cooking with lid do not stick to bottom.
  3. Put ghee and add bay leaf, caraway seeds, cloves, cinnamon, cardamoms, mice and wait untill spluttering.
  4. Add onions and cook low flame untill reach golden colour. Then add ginger and garlic paste, and cook untill raw smell of ginger and garlic goes away. Add pudina paste and pudina crushed and stir for 1 min.
  5. Add 4 cups water. When water starts boiling add rice, salt as per taste(check water for salt taste,if water is not salty then add more salt). Close the lid and seal the lid either with alluminium foil or cloths.
  6. Keep the flame to a low or sim and dum cook till the rice grains are tender and cooked. It will take about 7 to 8 minutes for the rice to cook. Do use a thick bottomed pan, so that the rice grains do not stick to the bottom of the pan. If you want you can check the rice grains once while cooking. If all the water has been absorbed and the rice grains do not look cooked, then add some hot water in the pan. Cover and continue to cook. Garnished with some mint leaves and served.

Just don't forget to pair with mirchi ka salan or vegetable korma!. You can cook Kuska in Arborio/medium grain rice or basmati/long grain rice for cooking Kuska. If you are using coconut milk then add water accordingly, otherwise, the rice may be sticky and over-cook. To make Kuska Biryani, heat ghee in a pan and when it starts to smoke add cumin seeds in it. This term refers to " Khushk " in Urdu, which means plain or dry.
