Bell peppers are rich in vitamin C, A, Potassium, Folate and Iron. Add olive oil to a large pot or dutch oven over medium heat. Once hot, add onion and a pinch of salt and pepper. Add pepper, carrot, celery, and jalapeño and cook for another five minutes.
Steps to make Vegetable chilli with cocoa:
- Sauté the onion, garlic, capsicum, carrot and courgette in a large pan until soft.
- Add all the other ingredients (except lime juice), mixing well and simmer for approximately 25 mins.
- When you're ready to serve, add in the lime juice and stir.
- Serve with brown rice.
My former favorite chili recipes include chili with cocoa powder and slow cooker quinoa chili. The chili with cocoa powder is made with beef and it is really good. A new chili has stolen my heart. My daughter has turned vegetarian on me and will not eat my chili with cocoa powder so I had to come up with something new.
