Instructions to make Chana dal burfi:
  1. First wash the dal 3-4 times then put the dal in pressure cooker and add whole milk and cook for one whistle on high flame and 15 minutes on low to medium flame.
  2. Meanwhile in a large vessel add 3 cups of water and the sugar and put it on heat on high flame till sugar dissolves.
  3. Cook it for 10-15 minutes to become little thick. Check it to take it in middle of fingers if a string is formed then our sugar syrup is ready.
  4. Turn off the flame and keep it aside.
  5. After that grind all the cooked dal in a grinder without using any water or milk.
  6. Now in a blender jar add some almonds cashews dry dates coconut and nuts and grind it with using little water. Don’t make fine paste of it.
  7. Now heat up pan with 1 tbsp ghee add the grinded dried fruits and fry it for 5-7 minutes on medium to low flame and remove it in a plate.
  8. Now heat up a pan with half of ghee and add the grinded dal in it and fry it till the colour changes and fragrance of dal comes out.
  9. Fry it for 10-15 minutes and turn off the flame and remove it in a large plate.
  10. Now heat up a large vessel with remaining ghee add cloves and green Cardamoms and add the prepared sugar syrup and boil it for few seconds now add 1/4 tsp of yellow food colour mix it.
  11. Now add the fried dal and mix it nicely keep stirring fast, add cardamom powder mix it, now cook it for 10-15 minutes on medium to low flame until it leaves the side of vessel. (don’t stop stirring). Turn off the flame.
  12. Now grease a large plate with some ghee and transfer the mixture into the plate and spread it all over nicely with spoon or spatula.
  13. Now sprinkle some chopped almonds and some desiccated coconut on the top and press it.
  14. Leaves it for 1-2 hours to semi set now cut it in any shape you want with the help of knife.
  15. Again leave it for 5-7 hours to set completely after that remove it carefully in plate and serve it.
